Being a Boulder, Colorado native, I must say this restaurant's food exemplifies the regional styles of mexican food. The style of green chile served here is not to be overlooked to a true green chile fan. Rich and repleat with pork, this chile is spicy and depth of flavor is consist. It is not thickened by an overt amount of starch, but thick because it's ingredients are cooked down into a perfect melding of flavors. My judgement of a great mexican restaurant is their green chile. I always order a green chile plate - rice, beans, and chile verde with flour tortillas. This will determine if I return.
