I've been to Kite several times on Friday or Saturday nights and have never waited for a seat. It's never crowded. I'm not sure why it doesn't draw a big crowd, I guess it's not trendy enough. But the sushi is good (especially the double tuna roll), the Mai Tais are AWESOME and it's pretty reasonably priced. It's not the best sushi I've ever had, but it's pretty good. Don't forget to finish off with the Muchi ice cream. Yum.
Pros: never crowded, good sushi
Cons: eastern european wait staff doesn't understand english very well.
