Anybody who makes it a point to eat california rolls does not know sushi very well. Most places use imitation crab in california rolls. Some advanced sushi eaters will eat a california roll if it is drapped with fish as with a specialty roll and then it's okay because a such a roll with real crab would cost a fortune. Most sushi in America is much bigger than is traditional due to local tastes. Nigiri and maki rolls are generally on the small side, the huge portion thing is all american.
