As many of you who read my posts know, I am a wedding officiant who performs wedding ceremonies throughout the Colorado area. There is none so fine as the site at Hotel Monaco. Several weeks ago I performed a wedding in their wine cellar! I know--it sounds unusual, but it was absolutely gorgeous!! Small an intimate, the staff had white candles and lights everywhere and the chairs were covered with beautiful white covers which made everything seem so elegant!
the bride was able to get read in a private room upstairs and made a dramatic entrance while the staff took care of the music and all of the coordination. I was very impressed! A great combination of sophistication and intimacy. After the ceremony, the bridal party and guests adjourned to the beautiful downstairs lobby for drinks and mingling while the staff converted the room into the reception site. I wasn't able to stay for the reception, but based on the performance of the staff for the ceremony, I expect it to be fabulous.

I have stayed in the Hotel Monaco for my bachelor party as well as my wedding night. It was great, the Hotel I mean.
Great service and ammenities. The rooms were very comfortable and affordable.
The restaurant is unbelievable.
Great location to all that Denver has to offer!
And they have a little Jack Russell that lives at the hotel. Dogs are welcome to stay.

My spouse and I tried this restaurant for our 20th anniversary. The food was fabulous! We ordered the crab appetizer, the scallop bisque soup, the seasonal pasta dish (which was hand rolled tortellini in a lemon sauce) and the salmon with crab stuffing special. I honestly don't remember having such a great meal anywhere else. Even the bread and honey butter was great. The service was a little slow because there was only one waiter and there was a huge conference/party, but it made the evening a little more paced and enjoyable. Parking is suppose to be free in the back of the restaurant, but I think you have to valet. It was a little unclear. We ended up finding a spot on the street. The outdoor patio was nice. Lots of traffic, but good people watching. Will definitely return to try their happy hour and/or their jazz nights.

The Jet Hotel nightclub is the Ferrari of nightclubs. The minute you walk into the club you feel like a celebrity. The whole place is decked out with modern furniture and stylish fixtures. The main floor is cool and spacious. The music is bumping and dancing is inevitable. The main floor huge, but then the downstairs floor is another world. There is a second full bar downstairs. The music is louder and the party is crazier. There are all kinds of hidden spots to get your dance on or chill out and enjoy your drinks. A definite hot spot that you don?t want to miss!

I recenty got extentions and my color done from a stylist named Malissa Garcia. They look like I went to LA or New York to get them done, she did such a good job. She new what color would look best on me without even asking what I wanted. I love my HAIR! I found a stylist for life.

For an enticing culinary experience, ask for the chef's choice tasting menu in the Palace Arms, and have the very able sommelier match wines to each course. You will be delighted at the sheer creativity and symphonies of flavors, and the portions are keyed to an extended evening of pleasure. Surprises in every bite, and very high quality ingredients.
We recently had our 25th anniversary dinner there; the well-selected treat was a blend of traditional (escargot soup, table-side caesar salad) and innovative (pork belly and poblanos; white fish in suberb sauce, etc. etc.). Everything was seasoned and garnished to perfection. The staff was attentive, and the chef Thanawat Bates came over to see how we liked every course.
Save up your pennies, and instead of going with the regular menu items, make it fun and very memorable for yourselves AND the kitchen staff.

I have been in Denver all week for the DNC and we are staying at the Brown Palace Hotel and eating some of our meals here as well. I must tell you that this restaurant, in particular (Ellyngton's) is THE place to be! I have seen all the major players here at one time or another (BiLL & Hillary included).More importantly I have to say that this is the best food I have eaten anywhere in Denver (Maybe ever!). I saw the chef yesterday conversing with the table next to me, a great looking guy without the usual "chefly"attitude. My Food was perfect , I ordered the chef's breakfast special that he was calling the Hunter S Thompson special, it included a Salmon cigarette which was actually a salmon & cream cheese crepe, Hash and huckleberry Pancakes...what a riot! Everyone at my table was so pleased not only with the food but the overall atmosphere here, really good vibes! Some of the hotels other restaurants are stodgy and the food doesnt compare. I'm not sure if it's the same chef or not but he does a great job here . If you are looking for a place to dine for breakfast or lunch while in Denver you won't want to miss Ellyington's. Oh yeah and order the special, whatever that may be, you are guaranteed to come away satisfied and wanting more! I can't wait to see what's on the lunch menu today or who may be in the room (rumor's about Oprah are circulating!)
