Really Good Food and REALLY Expensive 10/29/2008

Where is the glass ceiling for Steak House Prices... I think CUT has reached it?\r I must say the steaks were AWESOME, but man you pay for them.\r The wine list is very good and we imbibed on a few bottles of very very very good juice, but MAN DO YOU PAY FOR IT.\r The young dark haired bartender (who I think worked at Lupo in the past) at the entry bar, where we started our experience was very kind, knowledgeable and helpful. The server on the other hand, was lame... Let me say this: We spent a LOT of money here... a LOT!!! Our wine alone was more than most mortgage payments - or maybe multiple payments. But, we drank tap water and he didn't like that so he was a frowning mute the whole night, who we had to flag down for refills of our ""free water.""\r Oh, and they din't decant our wine - which I found strange.\r All the food was great - all 6 of us liked our meals - nothing was bad. App's Entree's and Desserts\r The prices are VERY VERY VERY aggressive, but they must have to pay mad rent since the Casino (Las Vegas Sands - LVS) and Restaurant Leasing Company (General Growth - GGP) are in deep financial trouble.\r I hope they all survive because the steaks are AWESOME!\r Pros: All Food, Wine, Location Cons: Server more

Favorite Vegas Restaurant 10/20/2008

I vacation to Vegas about four times a year and subscribe to Vegas magazine to keep up with the new restaurants and clubs that are always opening. We have been to every fine dining establishment in Vegas and CUT is our new favorite. We actually went back to Vegas within two months because my husband enjoyed this restaurant so much he couldn't wait to go back. The decor is very modern and the steaks and sides are done perfectly. excellent food but rather expensive 8/22/2008

Upon entereing, the dining room appears very chic... clean lines and modern, while the lighting and materials create a very warm and inviting atmosphere... not cold, not stuffy, but just right. We were promptly seated and the service all around was impecable. \r \r The menu selection is good. Nothing especially creative, but good staples as expected at a steakhouse of this calibur. They offer several grades of meat including USDA Nebraska corn-fed, American Kobe and 100 percent Japanese Kobe at around 22 dollars an ounce.\r \r The Steaks themselves were wonderful. I ordered the Japanese Kobe Rib-eye... so tender, i didn't need a knife. Perfectly cooked and seasoned. The 1200 degree ovens really sear the steaks the way I like them without blowing the internal temperature. This was paired with the Argentine Chimmichuri and Wasabi butter. The sauces were good, but the steak stood alone and the sauce actually detracted a bit from the wonderful flavor. My partner had the American Kobe Filet Mignon... again perfectly cooked and seasoned. The side of corn was absolutely fantastic. I know it sounds funny, but it's the best corn I've ever had. The creamed spinach on the other hand was really nothing special. Tasted a bit like the frozen stuff with a fried egg mixed in... too salty to boot.\r \r Except for the spinach, this was one of the best meals I've had in Vegas, but it does come with a hefty pricetag. Absolute perfection in fine dining. 7/27/2008

I dined at several restaurants in my recent adventure to Las Vegas, and this one by far was the best! Upon walking in, the atmosphere struck me as intimate. The dimly lit restaurant itself did not appear to be that large however it was comfortable. The prices were quite a shock, but we dove into the menu anyway. I started with a butter lettuce salad with cherry tomatoes, large chunks of bleu cheese, avocado, basil, chives and a sweet yet tart vinigarette I can't quite pinpoint an exact mixture of. The salad was bliss! I'd have to say it was my favorite part of the meal. For the main course, I had a medium rare big eye tuna steak (I don't eat much red meat). It was done very nicely and melted in my mouth. My associates enjoyed steaks. The exact cuts they had escape me, however I did try a bite and it was delicious. The vegetable dishes were also beyond amazing! We had the onion rings, squash & corn. I couldn't get enough of the corn. Perfectly seasoned in a way I had never experienced! For desert, we shared the chocolate souffle and a banana cream creme brule. I have to say I preferred the souffle, but both were exceptionally fantastic! Finally, the service was perfect. My water glass was never empty. Our server paid close attention to our needs. Cut is fine dining at it's absolute best! A highly recommended experience! Pros: EVERYTHING! Great in every sense. Weird review above from a guy (chefsweeney) that says he is classically trained. Says even ""select"" grade of meats at Costco better. WAIT....COSTCO carries CHOICE. more

wow what a huge dissapointment at what could be a really great restaurant! my wife and i had 8:30 reservations and looking in a half full dining room they made us wait 20 min before we got seated!(i really hate this, all they were trying to do was push us on the bar and press us to buy over priced drinks!!, ) when we where finally seated we still had to wait a good 5 min before anybody even noticed we were there! the food was very good dont get me wrong and prepaired perfectly, but a 45 min wait between apps and dinner? nobody ever filled a water glasses? they even forgot one of our side dishes!! and i had to waive the waiter down to get it!! this was worse service then what you expect at a dennys!! and this is a fine dining $150-200 a head wolfgang puck restaurant!! also when they rolled over there selection of kobe beef to impress us with the marbling i was not impressed (lol) and i told them so it was about a 5-6 on the kobe marbling scale (about middle of the road for kobe, 10 or higher is worth the big bucks!) and he said it is A-5!! and i said sure it is BUT you do know that the beef is rated on a marbling scale also and for A-5 this is not that great!! and not worth $40.00 a oz! i stuck with the 32 day dry aged prime and it was very good and a perfect black and blue. Below Average for a Restaurants of this Type 5/27/2008

The ambiance is amazing, and the service is what you should expect from this modern upscale restaurant. I am a chef and went to one of the top rated culinary schools in the country, in fact Chef Puck has an honorary doctorate from the school and I worked for him while going. I guess that is why I suggested CUT to my wife and the couple we went to Vegas with. I mean its Chef Puck one of the greatest chefs in the world. When I walked in I was amazed, this restaurant was spectacular and very trendy I was sure we were in for a BIG, BIG TREAT. When the waiter handed me the menu I was lost in culinary fusion. I mean in such a fine restaurant what do you order, everything looked wonderful. From the appetizers to the desert I was in culinary heaven. Once we ordered and after my water glass had been filled a hundred times. Are appetizers came Kobe Steak Sashimi, and Maryland Blue Crab & Maine Lobster both very simple but very good, totally worth the money. Then the main course I was so excited I could not wait for the award winning steak. I ordered the $60.00 6oz. Filet Mignon cooked very rare, I told the waiter he didn?t even have it cook. When I cut into the steak it was cooked medium-well if not well, the steaks lovers dream was over, there was no rejoicing. Funny thing was the rest of my party felt the same way, everything was overcooked. To be honest the cuts at Costco are CHOICE (SORRY!!!) meat and a million times better then what we were eating. The best thing about the meal was seeing Nigel Lythgoe the producer of American Idol and Dancing with the Stars. If you want a good meal in the town of sin I would suggest skipping the CUT it?s not worth the money. But don?t skip Chef Puck all together. Postrios this is one of the best meals we had during are stay at more than half the price. I think this restaurant rates within the top 5 of my best meals of all time. The appetizers were awesome and the Lobster Club is amazing. Pros: Service is awesome Cons: Over cooked steaks and some might say to salty more

Excellent! above expectation 5/7/2008

Went there for a birthday and the ambiance was amazing, the interior was clean, modern and upscale without any tacky designs. I tried the Tasting of New York Sirloin for $130 which consisted of the (Japanese Wagyu, American ?Kobe Style?, and the PRIME Dry Age From Nebraska. The price was reasonable compared to other upscale places. The only reason I gave 4 stars was because it was a bit too salty for my taste, others in the group that eat their food very salty- said it was salty also -so it wasnt just me. The rock salt was visible on the steak, I""m not sure if they meant it that way.\r \r My favorite was the Wagyu, it melts in your mouth! but 2 others said the Nebraska Prime was their fav. We all got the steaks medium, but it came out more like medium-well. The service was excellent, prompt and friendly, the water never ran out. I love their breads!! I've been to many upscale steak houses and this is on top of the line. Pros: Ambiance and service Cons: Salty more
