The new Owner, Bill, is from Rhode Island and he knows how to make great pizza crust, which is the true foundation for all good to great pizzas. He's fine tuning the prior Owner's recipes and ingredients, which were already pretty good, and making them great, especially the cheese. Most people's opinions on who makes good pizza varies about as much that for Mexican food, so one person's trash is another person's treasure. Still, Bill comes from the land of great Italian American pizza, so he holds himself to an entirely different standard than the vast majority of Colorado pizza chefs. My wife is from Connecticut, near Mystic Pizza fame, and boy is she a tough pizza critic. It's snowing to beat the band and all she wants on this particular Friday night is Willie's NY Pizza. This we can agree on is the best pizza, by far, in the southern suburbs of Metro Denver. Don't get fooled if you go, though, because Bill hasn't changed his sign yet from the former Owner, Stumpy's. Bill's new staff really does seem to understand that they have stumbled onto a man with his own pizza secrets, ones that are rarely found in Colorado. Oh, nearly forgot. Willie's NY Pizza is only To Go/Take Out, no restaurant to run. Just great NY-style pizza, hot in a box for your mad dash home... if you can get that far without sneaking a bite.
