Colima's is a little strip-mall taqueria-looking place that sure doesn't look like much, but looks can be deceiving. Everything I've tried here is good, but what you really want to go for is the carnitas. I've eaten carnitas at every taqueria and Mexican restaurant I've ever laid eyes on and this is without a doubt the best. I've had it soggy and fatty, I've had it dry and overcooked, I've had it crispy but flavorless and I've had it tasty but not crispy. I've also had that aberration that Chipotle's calls carnitas which is nothing more than braised, extremely salty shredded pork. Colima's carnitas is perfectly cooked, perfectly seasoned (with the citrus, garlic and onion flavors penetrating the meat), incredibly crispy and lightly salted. Swine nirvana. Even the obligatory refried beans and rice are flavorful and delicious. Pros: Excellent food, Friendly service Cons: Understaffed, Remote location
