Amitabul serves up some of the most flavorful and nutritious Korean vegan meals I've ever had. The dishes are so hearty even a meat-eater would be satisfied. Owners David and Bill seem to take great pride in the food they serve. It's one of the few Chicago restaurants to use brown rice in their maki rolls. The owner once told me he gets his brown rice from his Buddhist commune and not out of a supermarket. This vegan eatery is one of the best in Chicago and will continue to get a lot of repeat customers, including myself.
