They print their menus daily, they use fresh ingredients, so fresh that you will notice the difference in taste. Their chef does an excellent job of layering flavors, allowing the dominant food to retain its taste with other ingredients playing a supporting role rather than trying to compete for your palate's attention. Fresh seafood dominates the menu, so it's not a place for ardent vegetarians every day, though they can sometimes substitute tofu in some dishes in addition to the few vegetarian options that will probably be available regardless.
