Blue C Sushi is to sushi as starbucks is to coffee. They are a high quality superchain that seems to have got it right. The atmosphere is casual with a cool conveyor belt that constantly has sushi plates rotating around the chef. The plates are color coded by price so you know how much each item costs. When it is time to leave, they simply count up your plates to determine your total. They seem to be adding more and more franchises - look for them to expand rapidly.
