These two guys from Philly/South Jersey know their stuff. They make very traditional east coast hoagies that may not be as healthy as a turkey and gruyere from essential bakery, but taste a heck of a lot better.
The fact that they're pretty pricey doesn't keep me from going there once a week. My two favorites are their two namesakes: the Tatstrami and the Tat's Grinder. Ironically, one of the few subs that doesn't blow me away is their Philly cheesesteak, even if it is wit wiz.
Almost zero options for veggies.
