THIS IS AN HONEST REVIEW!!! Many of the prior review may have only tried Chama Gaucha as their ""first"" Brazillian Steakhouse, because this product based on other Brazilian Steakhouses is BELOW sub-par! :( Lets start with the good things this restaurant has.......... ""the staff"" mainly Chris (the other staff in our areas were also good and were both named David). I must add that, I visited on May 19th, 2012, at around 8pm. We called to make reservations since we were advised that the walk in wait was min. 2hours (so, we went ahead and made reservations for 9pm). Well, like I mentioned earlier we ended up walking in around 7:30'ish and was seated at 7:55-8pm there was practically NO WAIT (nonetheless a 2hr. wait). Moving along, we started with the salad bar as usual, VERY LIMITED as compared to Texas de Brazil, and Fogo :( For one, the Tabbouli was horrible (lacked significant flavor), this is sad, as I love to enjoy my meats with a flavorful Tabbouli as it enhances the flavors even more, .......unfortunately, this was not possible with the Chama Gaucha Experience. Next it was time to eat the meats, the guys were very fast, the first was the Filet Mignon asked for medium rare (got more rare), Tried the chicken cognac and it was flavorless, next came the pork ribs and they could have cooked it a little more (as a portion of it was quite rare), following that option came the Lamb..........the bone tips were very charred, so I thought that they were cook to perfection.......NOT!!! Slowly the night became a very big dis-apointment to say the least :( . I confronted the manager Jordan, and he was the MOST ARROGANT man I have ever came into contact with in San Antonio. A very bad reflection on the company as a whole! This guy made a snide remark to me after telling him about his ""slack in product"". I was VERY TAKEN BACK! As a manager Jordan, you should learn to take the H.E.A.T!!! Hear, Empathize, Apologize, and Take Action!! you acted with very little empathy so I didn't expect you to apologize for my experience (which you didn't/ you really need to be coached on your interactions with guest because what Chamma Gaucha has is a HEARTLESS EMPLOYEE miss-representing a potentially qualified product........... WOW!! Let me just tell you Chama Gaucha San Antonio I am a 14yr. Chef who owns one of North Houston's Largest Catering and Event Production Companies (so I know what I am talking about!) I love a GOOD Brazillian Steakhouse, if there is any advice that I can lend to you (the consumer) is if you are interested to have the FULL Brazilian EXPERIENCE, PLEASE TRY Fogo de Chao, then, Texas de Brazil, and LAST Chama Gaucha (if you insist) you will feel the same way I do! I didn't want to add this but my husband was on the toilet all night :( PROS: 1.) Good ""Servers"" (thats it!) Cons: 1.) Under cooked meats which lead to 2.) Lack of Flavor & a 3.) Limited Salad Bar People that go to a Brazillian Steakhouse know they will SPEND MONEY.......so spend it where you are going to get your money's worth..........
