For those of you who think spending loads of $ and a beautiful, trendy ambience translates to great Japanese food - please go to Nobu and the like. But if you like the freshest fish available and a fair size piece at that on rice, good teriyaki and combo plates with generous portions - Hide's is the best. They only get what's fresh (Fish) - so there may be days when they don't have the kind of fish you want, but if it's not fresh you shouldn't want it either. Owner is Japanese and the ""Itamaisan's"" are Japanese. Pleasant & traditional professionals - not rock and roll, flashy sushi chef wannabee's. Best bets - Salmon skin salad, Salmon or Beef Teriyaki a la carte with sushi or sahimi on the side or as appetizer. (My Mom's from Japan and she's picky - we go there often) If you go often - they get to know you and the chef's will let you know your favorite fish is in - so you don't miss out. Pros: Fresh Fish, Good portions, Valet Parking Cons: Busy, Small sushi Counter, Crowded room more
