Grew up in Japan. Had very disappointed many sushi restaurant in US. Freshness of ""neta"" anything sitting on the rice those include fish, shelfish, cooked materials etc are not only for quality of sushi. Need a good balance of rice and ""neta"". Many sushi in US use too small amount of rice. About 50% of sushi restaurant in US ignore the taste of rice.
I only have eaten at Kaneyama once. We went beacuse it is rated No1 in ZAGAT. I only ate sushi but the rice of sushi did not have right taste. Thge quality of sushi was below avarage. I would not go back again for eating sushi. I do not know other dishes though.
