The chef wraps avocado and spicy sprouts in thinly sliced fluke and adds a dollop of masago and key lime. Shpol has amassed an impressive cache of wines with prices ranging from $25 for a Lebanese Blanc de Blanc to $3,500 for the 1947 Chateau Petrus Pomerol.
