While visiting Seattle I stopped at every bakery I could find in walking distance of downtown, and this was ""the find"" of the trip. I bake bread for a living and went to bread baking school in France and as soon as a saw these breads I was impressed. These levain breads are baked on an authentic french stone hearth oven and the shapes and flavors are the real deal. Every detail of french artisan baking has been carried through with great detail. The vienoisserie looked pretty wonderful as well. The most impressive thing though is the commitment to biologique or organic flour. Why is this bakery not supplying more restaurants in town?
