With the emergence of Emeril Lagasse as a celebrity, it seemed like everyone was trying their hands at cajun food. But it became rapidly apparent that most of those people had never actually been to Louisiana. Enter Tim's Cajun Kitchen. Having spent a lot of time in Louisiana myself, the authenticity of the food at Tim's is outstanding. The flavors are complex and true to form. For cajun food in Huntsville, it's the only place to go. Don't forget to try the bread pudding!! (you can skip the alligator appetizer though!)
