The Springville MOA has a decent collection of Utah artists along with works by some other artists. They have paintings, photographs, and some sculptures. Though close to Provo, it is away from all things BYU, which is kind of nice sometimes. It is also a great place for wedding receptions. There is no admission fee to the museum making it a cheap date!
