I live in East Coast and I've never seen Kaiten Zushi there, though you may fine one in NY city. I go Kaiten zushi in Japan. I envy the West coast cities for that.
At a regular Sushi place service is very slow, because it takes time to make each sushi for every customers. Or they have to hire many chefs and the price goes up.
At Kaiten zushi, Sushi are already prepared and if you pick the freshly prepared sushi, you can get a good sushi as long as the fish are fresh and the rice cake is properly prepared.
At Yama, most fish were of good quality and the rice cake was decent. Particularly, you cannot eat such a good Salmon nigiri
in East coast. There are also many creative sushi I never seen before. I will visit Yama next time in the area.
