i've gone to aveda institute about 5 times now throughout the past year. i tried a couple other salons in austin, including a regular aveda salon. the institute gives you the same quality as any other salon - if not better - at 1/4 of the price. the students are always super nice and polite. i can't recommend this place enough. the only thing is you should expect your hair cut to take between an hour and an hour and half, because they have to have their supervisor review the hair cut at different stages to make sure they're on track.
