The Vault restauraunt is a very tiny restauraunt in downtown Houlton, Maine. The food quality is exceptional and comparable to some of the best restaurant's where I have eaten. They strive hard for service, however, sometimes new waitress's fall short in this area. I've never had a rude waitress, just inexperienced. Plan on making reservations, as seating is generally limited. Menu selections are now less varied. They used to have weekly dining selections, ranging from different appetizers to entrees. Not so much anymore, they generally stick to what's on the menu. You can almost be guaranteed to get great, amazing tasting food, and if you ask, they will cook it anyway you like it. With a little candor, they will gladly fix any problem you have, not that I expect you'll have one. Seats are hard wood chairs, not all that comfortable. BUT, the food is amazing. A family owned business with a key to success with involved owners. The chef is the owner. Sometimes the hostess is also the owner. A very invested couple who still care about the direction of their business. You will see the chef (the owner) frequently come out, greet people, ask them how they like their food, and is exceptionally friendly. If ever in this area, a great place to eat. Lightly flavored music always playing in the background, sometimes a little Bing Crosby or light Jazz. Place can get a little loud when seating is to capacity.
