I've been to the Yellow Coyote Tortilla Factory several times, and I've had pleasant experiences each time. The food was outstanding, the service was excellent, and the atmosphere was pleasant and relaxed. I prefer to go there during dinner time, instead of brunch, but regardless of when you go, you're going to get a delicious meal (and home made tortillas)!
My favorite dishes are the chicken enchiladas, the fajitas, and the carne asada plate. The waiters are very attentive, and you never feel rushed. The decor is very nice, you can tell that they put a lot of thought into creating a nice dining atmosphere. It's also very reasonably priced. I would highly recommend this to everyone.
