My dad happened upon Carl's Italian Restaurant en route to Elitch Gardens when I was a child in the early seventies. It became our pizza haven after every trip the the amusement park, and now, after living in North Denver most of my life, it is by far my favorite pizza in town. Not because it tastes like some great rip-off of Chicago or New York pies, but because it's like no other pizza I've ever eaten. The sauce is spicy, the crust flour-y and crisp, and the toppings are always fresh. There's something to be said about originality, a trait you'll find in abundance at Carl's.
