The average 'Joesan' Japanese judges good sushi by the size and freshness of the fish served. It's got to be a big piece and needless to say, if it's big it better be really fresh. And sushi just means vinegar flavored rice, by the way. It doesn't even have to have fish at all let alone raw fish. No rice and it's either sashimi or something else ....
