La Cueva is far above any mexican restaurant in Denver. I know authentic Mexican food from my granny's kitchen and La Cueva only serves the best. The tortillas are homemade pillows of goodness, and the chile rellenos are HOT! (fair warning) filled with the perfect amount of cheese and smothered in tasty green chile. The chips and salsa get your tongue worked up for a holy experience. Choose a specialty marg and you'll be in heaven. The desserts are standard; flan, sopapillas, if you like chocolate go for the stuffed sopapilla with mexican chocolate ice cream, mmmmmm. If you don't like the heat then get out of La Cueva!
