Although I eat regularly at the dim sum heavyweights like Koi Palace, Fook Yuen, and HKFL, I'm still very fond of Ton Kiang. Ton Kiang is somewhat Americanized, but that manifests mostly in the limited menu, which only has about 30-40 dim sum treats instead of the 100+ at the grand palaces. The quality is high, especially in their steamed plates: the dumpling skins are wonderfully translucent and delicate; the seafood and vegetables light and unbelieveably fresh. On their up days, the shrimp dumplings, chive dumplings, and mango pudding beat all others. Ton Kiang also serves dim sum quite late, unlike most places which stop serving around 2. I need to make another trip soon to see if the quality is still there, but overall I recommend Ton Kiang if you're looking for an introduction to dim sum.
