About the ribs - there are two styles of ribs and neither is the "right" way. Some places wrap the ribs while they cook and they are soft and the meat falls off the bone. The other way is to smoke them unwrapped and the meat stays on the bone and you bite it off. My fav is the second way and nobody does them better than Pappas BBQ..
