Just because Paolo is from Italy, doesn't mean his Gelato is Authentic. After spending an extensive amount of time in Italy and Germany(which prepares ice cream similarly), I would say his lacks a creamy texture. It tastes watery or some substitute. Paolo also serves it with an ice cream scoop, which is not what Italians use to serve gelato. A spatula is used for this ice cream. I would recommend ""what's the scoop"" for a more authentic taste.
