Just what is American cuisine? Is it the soul food of the South? The seafood of the Northeast? The meat and potatoes of the Midwest? Or is it the ethnic specialties brought here by immigrants from around the world? Perhaps the best answer is that it's a hybrid of all the nation's regions and ethnicities. Chefs Kirk Wishon and Curtis Albright seem to subscribe to this definition by turning out dishes that represent all parts of the country, including its ethnic pockets. And they aren't afraid to have a little fun with bourgeois American favorites, like a Green Goddess iceberg lettuce salad and a BLT: Their version is dressed up with smoked salmon and red onion. Happily, the inconsistent service has improved in recent months, making this American place well worth a visit.
