As a former server I can say that you are right in your assumptions. There are 3 UNPAID days of training. The first day I was there they had me follow around "the best" server they had there. She pawned me on to her tables, and basically sat back and relaxed. After running around like an idiot, I received absolutely no tips or pay for working 10 hours. Let me say this again, the "training" is UNPAID. Then they charged me $50 for the uniform and $35 for shoes. I was racking up a tab, before I even saw any money from working! There are no people of color, as you say, and many of the staff in NE Philly make sure of it. The male servers act like they are gods and say the most disgusting sexual comments to the female servers. A bartender even grabbed my chest. If you were wondering why your server didn't give you any silverware or plates, its because management frowns on it. The kitchen manager that works Sunday mornings is something you have to see for yourself. He yells at everyone else for having "safety violations" and yet he doesn't wear a hat or gloves. He eats and picks at the food as it is made, and then serves it to you for dinner. The place has crabs and c-roacccches! I could not take any more of the abuse from this place, and so I got out.
