So it's either a holiday or a Saturday morning & we all head out the door for my favorite breakfast...Waffle House. It ranks just barely above The Cracker Barrel, but it much closer to my home. One of my favorite items to order is the Hash Browns- scattered, covered, chunked & topped. Yep, you read it right! I prefer to have it well scattered, & covered in cheese. :) Also on my food agenda, I order 2 scrambled eggs, well done, bacon & grits. Yes ma'am, GRITS. Grits are a Southern staple in our dietary needs. If you're in the Midwest or from "up north" you may enjoy cream of wheat instead. I like both. The server brings me a big glass of orange juice, sets out the napkins, silverware & syrup. Then my food order is YELLED out (I've never figured out why they continue to do it, but hey- if it's not broke, don't fix it.) 2 eggs, cooked well, waffle, hash browns- scattered well & covered in cheese (I could be wrong about the terminology but I'm now starving thinking about this!) , bacon & lightly! buttered toast. (Yeah Toast!) Once my delicious breakfast food is delivered to the table, I begin the next step in Southern Cuisine delightfulness. I break up my bacon onto the top of my eggs. I add a dash or two of salt & pepper, too. Next comes the grits...yes, the grits are DUMPED upon the sunny scrambled eggs & crumbled bacon. They are then mixed around & over on my plate with a touch of syrup added for my sweet tooth. The toast acts as a scooping agent or a shovel to get the food upon my fork when needed. If there is any room left or my waffle hasn't been eaten by my children; I'll eat some of it to top off my meal. The servers are friendly, the food is fresh & hot, AND they're open on the holidays! 24/7.
