They make them fresh to your order. At Clay's you can get your PoBoy dressed or pressed. For those of you who aren't familiar with cajun cooking and terminology, I'll clue you in. A Dressed PoBoy is a sandwich made on French bread. It will have your choice of meat that is topped with mayo, mustard, lettuce, tomato, pickles, etc. The Pressed PoBoy is made with French bread and your choice of available meat and then it is put in a sandwich grill and pressed flat. This pressed PoBoy will be crisp, hot, and delicious.
