Among all this talk of ribs and pulled pork, one of Dinosaur's best meats has been neglected. When I go to Dinosaur, I head straight for the Ode to Elgin (ribs, brisket, and Elgin sausage). I grew up in San Antonio and discovering my favorite sausage in Harlem was like going home. I also like the brisket, and the ribs are decent, but the sausage is what I go for --and definitely ask for the sauce on the side. I have never had an issue with the service, although I usually get it to go as I live in Harlem, and don't love to wait an hour in line with my kids.
