Much like a child awaiting the arrival of a birthday or Christmas, I waited and waited and waited for Fab's to return. They finally reopened recently so we joyously placed an order for takeout...Eggplant Parmesan..our mouths watering for the amazing Eggplant Parmesan we'd been missing...Joe Fab's grandmother's recipe. Sadly, it was a huge disappointment. Instead of using the traditional breaded eggplant, they now use grilled eggplant. Don't get me wrong, I'm a big fan of grilled vegetables but the contrasting flavors just don't work in this dish. Most of the eggplant was uncooked and inedible. I am willing to give it one more try before saying I'd never go back. I hope things are better next time.
