the food there tastes great and the people there are very nice; however, while visiting a friend that worked in the pastry department i noticed a few things that were pretty nasty. i watched as the guy that makes the pastelitos and stuff swept the floor. instead of throwing away what was swept, he just made a pile under the machine that they use to roll out dough. he then rolled out a big piece of dough that was so long that not only did it hit the floor but it landed right on the pile of stuff he had swept under the machine. when he put the dough onto the table, it was full of crumbs and little black things (which he didnt pick out) i also saw him drop a few pastries on the floor; instead of throwing them away, he just laughed and put them back on the tray. another thing that i found kinda nasty was how when the mousse cakes they had on display started to look like they've been there too long (which im sure they had) they just took them upstairs to where they make the pastries, threw away the bad fruit, redecorated the cake, and put it back on display. the last thing i observed was the pastry cream they use for various desserts. they make large batches of it, leave it out all day, unrefrigerated, then put it away and do it again the next day until it runs out. pastry cream is milk, sugar, and eggs...it needs to be refrigerated!
