My husband and I were both in the mood for some pasta. We were working downtown in the Pearl district with a very limited time to eat. We decided to pop in on the Friday night crowd at Everett St Bistro in hopes of a quick meal or appetizer. When we were seated we were apprehensive on the ability to get in and out in the 25 min we had for our meal. But, to our surprise the service was fantastic and very accommodating to our needs. We, as vegetarians, didn't have a huge option of items. But, we did find the vegetable/salad appetizer which was phenomenal. This dish was presented beautifully and although I didn't expect carrots, raisins, and vinaigrette to taste so delicious. The combinations on this appetizer plate were absolutely exquisite. My husband and I decided to split the eggplant dish since we inhaled a bucket of bread prior to the appetizer. The eggplant was cut, seasoned, and breaded perfectly. The sauce was a perfect compliment to the taste of the eggplant. The dish was one of my favorite eggplant marinara dishes I have had. Bravo Everett! We will be returning to enjoy the wine and a longer visit to the bistro. Pros: GREAT EGGPLANT! Cons: Not a ton of seating so you are in close quarters with other tables (not a lot of privacy)
