Our beautiful and balmy night out in Manhattan's meat-packing district was marred by the peculiarly unpleasant case of ""attitude"" from the powers that be at Pastis. When we ordered a side of French Fries my wife asked if she could have them cooked extra well done--not pale, but brown in color. ""No problem"" was our waiter's reply. (Which leads me to wonder if the term ""No problem"" could be banished from the vocabulary of waiters and sales personnel. Why not, ""Of course,"" ""Naturally,"" or even ""Our pleasure?"") Anyway, they were served a few minutes later, piping hot, but pale. After a few bites, my wife reluctantly asked the waiter if he would mind taking them back because they weren't well done enough. ""No problem,"" he said. A few moments the raven black clothed manager came to our table, gently leaned over and softly stated, ""It's about the French Fries."" Uh-oh,"" I thought.,""We've just reached restaurant red alert."" Yes, we said. It was. ""That's the way we prepare them."" Silence. ""You mean you can't leave them in the cooker a few minutes longer?"" came my modest proposal. ""That's the way we prepare them,"" quoth the Raven, nevermore. That was our feeling at the end of the meal, too. We shall be going to Pastis ""Nevermore."" Pros: General Ambience Cons: Attitude
