Went yesterday for the first time and had the rib basket and brisket plate. No sides, no desserts. Just going for the products of the smoker. I've been known to throw a brisket on the smoker every once in a while so I thought I knew a little something about the craft. People...this is something else entirely. I mean, this is like a revelation of what a human being can do with a smoker. Really, why put 20 hrs into a cut of meat when you can get a top quality steak in under 20 minutes? Just to say you cooked it for 20 hrs as if the cooking time itself was some sort of accomplishment? Not at all. Yet that's all a lot of BBQ places seem to have going for them. Yesterday at Martin's was like hearing an answer from on high, and all I could say was, ""Oh...I see. That's why we do what we do when we BBQ."" Truly, this is inspirational food from an inspired crew. Pros: A message of BBQ love
