I live 30 minutes away, and I often make the trip to Atlanta solely for the purpose of eating at Pancho's.
Their cheese dip is to die for. And their regular salsa is great, too!
I always get their chicken quesadillas. Unlike most Mexican restaurants, the chicken here has tons of flavor. Pancho's costs a little bit more than most Mexican joints, but the portions are huge and I always take enough home with me for lunch the next day.
If the weather permits, I'd recommend sitting outside on the patio. Sure, the only view is of the highway, but it's still fun!
