When I heard that Marino Rosato was the new Chef at Palma in the Village, I could not wait to get a seat! While the menu, which changes daily, presents as a rustic introduction to classical Italian cuisine, the efforts of the Chef Rosato go so much further! The flavors and textures of the meal he prepares for you only begin to seduce your appetite. The antipasto is uniformly light, clean, delicate, and lasting. The dinner of herb crusted baked swordfish was uniformly cooked for tenderness and gently bedded on grilled brussel sprouts and tender seasoned onions, with a topping of sliced cherry tomatoes. This dish was so good, it induced our table to begin sharing plates and stories about food that we thought might rival our meal, but in the end, all agreed, that he had presented us with a dinner without compare! Exquisite! Palma is short on size but long on romance and charm. Bring the ones you love and stay as long as you can. Go when Chef Rosato is there, and be prepared for the incomparable!
