not impressive at all. i am a chef myself here in portland at a fine dining establishment, and whenever i get a special request for something back in the kitchen, my only response is "yes , of course i can do that" i assumed they would be accomidating to vegetarians. its not that hard to omit the meat. i know, i accomodate customers daily with special needs. i remake an entire sauce if i have to to make them happy. shame on you head chef, for making the call that night to only allow us the one option on your menu to eat. and shame on you , our waiter, that obviously noticed we only took maybe two bites of our pasta and didn't even ask us if it was okay. we chefs talk amongst ourselves, a restaraunt that doesn't accomodate peoples needs these days, will be less frequented.
