As a Chinese American, I have eaten alot of regional food in my home, here and all over the world. My dad says this is THE BEST Chinese food he has eaten in USA!
What about roasted goose, oil baked chicken, stir-fried snails with basil, greens with shrimp paste or furu (fermented bean curd).
All the food is fresh, non-formulaic. Sauces have character, do not feel like they were added from the giant sauce can.
The kitchen is high volume, service is fast and efficient. No dawdling or chatting to customers. Large take-out business, if you wish to dish up these delicacies at home.
Reservations mandatory unless you want to wait interminably. Exc. value considering quality and preparation. It would be twice the amount in NYC.
