Roman Candle on Willy street was my first Wisconsin pizza experience! As always, I order a plain cheese pizza for comparison purposes. The pizza has a typical Wisconsin thin crust - almost crisp and cracker-like - but slightly more doughy than the uber-crisp pizza places. The cheese is fresh and local, and the sauce is flavorful, with notes of several herbs and spices. We've tried several toppings and all have been fresh and tasty. It does tend to be a darker pizza - not exactly overcooked, but certainly well-done - so if you prefer it a bit lighter be sure to ask. They're always willing to take special requests.\r

One of the nicest thing about the Roman Candle menu is that they note which ingredients are locally produced (less than 50 miles away), which are Wisconsin-produced, and which are conventionally produced. This makes it easy to choose and experience local tastes!\r
