I had the $9 vacuum coffee, Ethiopia Beloya, . The process of creating the vacuum coffees is like a science demonstration with beakers, a halogen bunsen burner and boiling water. I had no idea what to expect from a $9 cup of coffee. The taste: Very complex, my tongue was waiting for the bitter, burnt taste but there was none. I tasted cedar along with citrus (but not acidic) notes. The coffee finishes with clean floral notes. The baristas of Barista know and love their coffee.
I need more stars to give this place! The best coffee in Portland.
