We extended Brian an invitation to the Diamond ""A"" ranch in Seguin TX. We had heard about all the great things he could do with wild game. We had also enjoyed his jalapeno Kiwi jelly and a few of his sauces. What we really wanted was to see first hand if the walk could back up the talk. Brian was amazing. As a novice cook myself I could tell right away that he LOVED cooking. His eyes would light up everytime he started to discuss cooking. He is not only a great cook but also a great teacher, very patient and explained everything including the ""why's"" and he has a wonderful ability to get everyone involved. We did several dishes for the weekend and everyone enjoyed the food including other guest, owners, and ranch guides. Everyone who tasted a dish would come to me and make sure that I was taking notes so that it could be somewhat duplicated in the future. I personally enjoyed the new and easy techniques of flavoring and cooking. This experience has broadened my menu many fold, just the ability to add a sauce or a simple reduction to make a totally different meal with the same basics that you normally use plus being able to cook wild game that would make it in any 5 star restaurant . I since have purchased most of Brians sauces and spices and now I look forward to cooking so that I can see how it all turns out. My mouth waters at the thought of the next time I get to cook venison wrap arounds or the hunters quick dirty rice. Brian is a person that you really need to be around. I know that any event I have in the future will include him if he is available. Where were you when I got married?? I had to settle on mexican food catering....lol.
