I went there last night and loved my meal! First off, I don't think I was ever satisfied with a restaurant margarita till Colibri. The margaritas are wonderful! Fresh and light so that you can actually taste the tequila. Hot tortillas with different chili sauces are served in place of chips and salsa. Awesome! My date and I each ordered the filet mignon. I couldn't have imagined a better steak dish. The meat was covered with chili poblano sauce and topped off with bleue cheese -- a combination I never would have expected to be sooooo good. If you get the filet -- please get the cornbread on the side. AMAZING! The cornbread is smothered with chili cream sauce. The service was great. Our waitress recommended all of our dishes. The restaurant itself isn't so romantic, but the food makes it ultra-romantic. You'll ooooh and ahhh after each bite.
Pros: worth the wait, food, margaritas!
Cons: expensive, long wait
