Take Ely's challenge." you will love our eggplant even if you hate eggplant". The eggplant is sliced and grilled, basil pesto and Lebanese style garlic paste are smeared on the bread. The sub is then perfectly toasted and finished with tomato provolone cheese, crushed red pepper and a hint of vinaigrette. My wife would rather have this eggplant sub every time we do take out.
