If you go to Kayo, and you should, don't stick to just sushi. I lived in Japan for a year, and there are many other types of food the Japanese enjoy. Kayo serves them all. Your best bet to deal with the wait caused by having a single sushi chef at this family-run restaurant is to order a sushi appetizer, followed by a meal from the kitchen.
