Eat it? Evidently not, because every year, the people of Mitchell, SD plant several acres of multicolored corn with the specific purpose in mind of using it to create their 'corn palace' - a building that is, reassuringly, made of concrete, but decorated entirely with ears of corn.
Supposedly, the corn palace originated as a way of attracting farmers to the region, but it's long since become a cheesy roadside attraction. For some reason, the Midwest and West is full of these things.
Well worth a visit.
