I visited Lake Placid on two different weekends this month, and tried to get a table (sans wait) at Caribbean Cowboy three times (Fri--no; Sat--no). Third time, on a Sunday night, was a charm. I can see why this place usually has a line. The vibe is crunchy and relaxed (a less uptight Moosewood?) and the food is terrific. I had a vegetarian bean and corn enchilada and my friend had a special veggie quesadilla with mango--an extremely large amount of food, reasonably priced, and delicious. We shared a warm bourbon brownie with ice cream for dessert--heavenly. I've tried other mex places in town (Luna Loca, Desperadoes) and they don't even come close.

Cons: weekend nights have a heft wait; tight parking
